"OLIVO A RACEMI (A RACIUOPPE)" WAS THE FIRST DENOMINATION ATTRIBUTED TO THE CULTIVAR "CORATINA" BY PROF. GIROLAMO CARUSO OF THE UNIVERSITY OF PISA IN THE THIRD VOLUME - MONOGRAPH OF THE OLIVE TREE - OF HIS ENCYCLOPEDIA (10 VOLUMES) PUBLISHED BY UTET IN 1883 .
Extra virgin olive oil - monocultivar - "CORATINA", extracted from healthy, well-nourished drupes, at the right point of ripeness, harvested with only a shoulder shaker, without the use of rods, and pressed as soon as possible to avoid fermentation, molds and heating.
For its very low acidity (0.15), the lowest number of peroxides (3.0) and the high content of polyphenols (738 mg./lt.), Which make it a natural medicine, evo RACEMI has obtained significant awards in international and national competitions.
The sensory evaluations, which it was repeatedly subjected to by multiple panels during the selections, highlighted its excellent organoleptic qualities, its fruity and balance.

“Extra virgin olive oil with a yellow color with green reflections and a limpid appearance. Intense green fruity, broad and enveloping, with prevalent vegetal notes of leaf, almond, artichoke, green apple and aromatic herbs. On the palate, hints of chicory, rocket and cut grass are added. Medium bitter and spicy in great balance. Excellent harmony and persistence ".

At the end of the last century and the beginning of the current it became the only supplier for all of Switzerland of organic extra virgin olive oil of pure and unique "CORATINA".
He dedicates passion, love and daily attention to his secular plants in the countryside of Trani, pruning them annually, plowing them and fertilizing them adequately, irrigating them from well-owned wells with moderation and consistency to avoid their water shortage and ensure the daily requirement of lymph and nutrients.
